Preparation Time: 40 mins (or 20 if cheating with the base!)
Cooking Time: 10-20 mins
Serves: 1 pizza
Ingredients:
2 tbsps extra virgin olive oil
5 or 6 chopped wild chives
Pinch of salt
Freshly ground pepper
A good handful of trimmed fennel fronds
2 large garlic cloves, minced
A few stripped yarrow fronds (or chopped whole fronds if the yarrow is young)
Goat cheese (or a good melting cheese of your choice)
Pizza base
Method:
Preheat the oven to 450 degrees, preferably with a baking stone in it.
Roll or press pizza dough and line a 12-14 inch pan (or simply use your pre-made pizza base)
Brush the pizza base with olive oil and lay on the goat cheese, cut into fine slabs. Spread the fennel, yarrow, and chive mixture over the cheese in an even layer.
Place pizza on baking stone or pan and bake for 15 to 20 minutes if using fresh dough (10 minutes if the dough is pre-made) or until the edges of the crust turn brown.
Remove from heat and serve.
